About this simulation

A 90-minute, 4-round basic Express simulation for Spanish vocational training (Formacion Profesional), module 0317 Extraccion de aceites de oliva of the Tecnico en Aceites de Oliva y Vinos (Real Decreto 1798/2008).

The learner is Alba Quesada, a newly qualified mill operator of a fictional olive growers' cooperative in the campiña of Jaen, through her first campaign (2027-28): one two-line, two-phase olive-oil mill whose members are paid on the oil their olives give and on its category.

Four situations set the campaign's course: the first day, and how tree olives (vuelo) and ground olives (suelo) are received (apart, ticketed) and how long the olives wait (milled within 24 hours, never piled for a week); the bulk of the campaign, and how the fruit is milled (the sieve changed with the ripeness) and how the paste is malaxed (below 27 C for 60 to 75 minutes); a frost and storms, and how much water goes into the decanter (the least the paste needs, mains drinking water, never untreated well water) and how a jammed malaxer is cleared (locked out first, never cleared running); and the tail of the campaign, and how the tanks are classified (full analysis and an accredited panel, never the suelo blended into the virgen extra) and how the campaign is recorded.

Three critical errors cap the round: untreated well water in the process, a machine cleared running, a fraudulent blend. KPIs: share of the oil that leaves as virgen extra, controllable operating cost, oil lost in the alperujo per tonne and non-conforming lots. Lesson: a hotter, longer malaxation gives more oil and worse oil. Spanish primary, English parity.

Fictional mill, cooperative, town and people; real curriculum and EU category limits cited.

What participants learn

After the session, participants will be able to:

  • Explain why tree-picked and ground olives are received, milled and stored apart and milled within 24 hours, and trace each lot from the member's ticket to its tank
  • Evaluate the malaxation temperature and time by quantifying the trade-off between the oil extracted and its category, holding the paste below 27 °C for 60 to 75 minutes
  • Set the decanter's water to the paste, with drinking water only, and use the oil left in the pomace as the measure of the extraction
  • Apply stop, isolate, lock and tag to a jammed malaxer before the guard is opened, and explain why clearing a running machine is never a time saving
  • Judge an oil's category on its analysis and the tasting panel rather than acidity alone, recognise a blend sold under an unproven category as fraud, and record the campaign

Prerequisites

  • Has seen a mill, on a visit or on video, and done the module's first acidity analyses

Who it is for

An introductory simulation that assumes no prior knowledge of the subject, designed for undergraduate courses. It also works in vocational and high-school programmes and in onboarding sessions.

How a session runs

  1. The instructor creates a session from the Eureka dashboard and invites the participants.
  2. Participants play 4 rounds. In each one they submit their decisions and the simulation calculates the results. The first round opens with: lunes 25 de octubre, 7:30: la recepción y la espera.
  3. The simulation can be run in English, Español.
  4. The instructor follows each participant's progress and results from the dashboard, and uses the class results for the debrief.

Decisions participants make

The decisions participants make during the simulation:

  • Cómo se recibe el vuelo y el suelo
  • Cuánto espera la aceituna antes de molturarse
  • Cómo se moltura la aceituna
  • Cómo se bate la pasta
  • Cuánta agua entra al decantador
  • Cómo se desatasca la batidora
  • Cómo se clasifican los depósitos
  • Cómo se registra la campaña
