About this simulation

Pasteurizacion y conservacion (Thermal Processing).

Spanish vocational training (FP), Industrias Alimentarias family: module 0143 Tratamientos de transformacion y conservacion of the Tecnico en Elaboracion de Productos Alimenticios (grado medio, Real Decreto 452/2010) and module 0465 Tratamientos de preparacion y conservacion de los alimentos of the Tecnico Superior en Procesos y Calidad en la Industria Alimentaria (grado superior, Real Decreto 451/2010).

The learner is Ainara Montejano, a newly qualified heat-treatment technician at a fictional preserves plant with a plate pasteuriser for chilled vegetable broth and a retort for cooked pulses in glass jars, deciding lot by lot what treatment each product received and what can be released.

Four rounds, four moments of one morning shift: starting the pasteuriser (the validated time and temperature; the repaired recorder checked against the reference thermometer and the divert valve tested), a temperature drop below the critical limit (the divert valve left to divert; the bottles held back to the last good reading), a retort load with a process deviation and badly seated lids (the load held until its lethality is calculated; the capper stopped and closures sampled) and the release for the 14:30 truck with a request for a longer shelf life on a new reduced-salt broth (lot-by-lot release on reviewed records; a shelf-life study before any longer date).

Eight four-option decisions scored on conforming product, minutes of line stopped or reprocessing, avoidable cost and treatment control; four critical errors cap the round at 40: overriding the divert valve, counting under-processed bottles as good, releasing a retort load with a deviation without calculating its lethality, and extending a shelf life without a study.

Lesson: without the validated heat treatment there is no safe product to release. Training level only: decision practice that complements supervised plant training and the plant's HACCP plan; fictional company, people and figures; no real process settings. Spanish player-facing strings with full English parity.

What participants learn

After the session, participants will be able to:

  • Start a heat treatment on its validated time and temperature, checking the recorder and the divert valve before filling so that the record proves the treatment
  • Respond to a thermal deviation by letting the automatic divert act, recovering the heating medium and not filling until the schedule is stable, and hold a deviated retort load until its lethality is calculated
  • Bound the product made during a deviation back to the last good reading, hold it for quality to decide, and justify with figures from the play why minutes of stopping cost less than product that passes
  • Decide lot by lot which product to release, signing only for lots whose temperature record, closures and samples were reviewed and keeping held product back even if the truck leaves short
  • Justify a shelf life on evidence, refusing a longer date for a changed recipe until a shelf-life study supports it, without cutting dates that were already validated

Who it is for

An intermediate simulation for participants who already know the core concepts of the subject, designed for master's and MBA programmes.

How a session runs

  1. The instructor creates a session from the Eureka dashboard and invites the participants.
  2. Participants play 4 rounds. In each one they submit their decisions and the simulation calculates the results. The first round opens with: Miércoles 9 de junio, 06:00: el arranque del pasteurizador.
  3. The simulation can be run in English, Español.
  4. The instructor follows each participant's progress and results from the dashboard, and uses the class results for the debrief.

Decisions participants make

The decisions participants make during the simulation:

  • Con qué tiempo y temperatura arrancas el caldo
  • Cómo compruebas que el registro dice la verdad
  • Cómo respondes a la caída de temperatura
  • Qué haces con las botellas envasadas durante la caída
  • Qué haces con la carga 7 del autoclave
  • Qué haces con los cierres
  • Qué lotes liberas para el camión de las 14:30
  • Qué fecha lleva el caldo nuevo con menos sal
