About this simulation

A 90-minute, 4-round intermediate Express simulation for Spanish vocational training (Formacion Profesional, grado superior), module 0503 Gestion administrativa y comercial en restauracion of the Tecnico Superior en Direccion de Cocina and en Direccion de Servicios de Restauracion.

You are Noelia Sarvise, the new manager of Casa Pardinilla, a fictional independent restaurant in Zaragoza with 70 seats, a carta of eight mains and a summer terrace, for calendar year 2027.

Round by round you decide two things: in January how the dishes are costed and how the carta is read (the menu-engineering matrix of contribution against popularity, the sales ranking, the food-cost percentage or the competitors prices); in April the carta and the prices; in June the terrace and the services that open; and in October the budget and selling in the dining room; at each decision point the year is projected again with the decisions taken so far.

Each round is scored on profit, the average contribution margin per main and food sales, with the food-cost percentage shown but not scored; putting tables beyond the terrace licence or charging bread nobody ordered caps the score. Spanish with English.

Who it is for

An intermediate simulation for participants who already know the core concepts of the subject, designed for master's and MBA programmes.

How a session runs

  1. The instructor creates a session from the Eureka dashboard and invites the participants.
  2. Participants play 4 rounds. In each one they submit their decisions and the simulation calculates the results. The first round opens with: Lunes 11 de enero de 2027: los escandallos y la lectura de la carta.
  3. The simulation can be run in English, Español.
  4. The instructor follows each participant's progress and results from the dashboard, and uses the class results for the debrief.

Decisions participants make

The decisions participants make during the simulation:

  • Escandallos de los platos
  • Cómo se lee la carta
  • La carta de primavera
  • Los precios
  • La terraza (junio a septiembre)
  • Servicios abiertos (junio a diciembre)
  • Presupuesto (octubre a diciembre)
  • Venta en sala
