About this simulation

A 90-minute, 4-round basic Express simulation for Spanish vocational training (Formacion Profesional, grado medio and grado superior), the common module 1708 Sostenibilidad aplicada al sistema productivo.

You are Ainhoa Garinoain, the junior quality and environment technician of Panificadora Ebrocierzo S.L., a fictional 38-person industrial bakery in Tudela (Navarra), and you prepare its five-year sustainability plan, from April 2027 to March 2032, with a budget of 150,000 euros.

The bakery runs two gas ovens, three R-404A cold rooms and six diesel vans; its footprint is 765.6 t CO2e a year and 115 t of waste go to the general bin, 80 of them returned bread.

Round by round you decide two things: how to measure the footprint and the first measures (a basic efficiency package, LED, ISO 14001 or carbon offsets); the energy (solar self-consumption, a green tariff, the same contract or the cheapest price) and the waste (the food-waste hierarchy, the general bin, biogas or a farmer with no document); the packaging and the delivery fleet; and the next investment (natural refrigerant, electric ovens, nothing or a battery) and what the bakery says on its bags.

Every month electricity, gas, diesel, refrigerant, waste and film are recomputed. Each round is scored on the net saving over five years, the footprint cut and the waste cut, with the investment, the payback, the year-5 saving and the offsets bought shown but not scored; offsets never lower the footprint.

Giving waste to someone with no authorisation or document, or calling the bread carbon neutral on the strength of offsets, caps the score. Spanish with English.

Who it is for

An introductory simulation that assumes no prior knowledge of the subject, designed for undergraduate courses. It also works in vocational and high-school programmes and in onboarding sessions.

How a session runs

  1. The instructor creates a session from the Eureka dashboard and invites the participants.
  2. Participants play 4 rounds. In each one they submit their decisions and the simulation calculates the results. The first round opens with: Lunes 1 de marzo de 2027: el diagnóstico y las primeras medidas.
  3. The simulation can be run in English, Español.
  4. The instructor follows each participant's progress and results from the dashboard, and uses the class results for the debrief.

Decisions participants make

The decisions participants make during the simulation:

  • Cómo mides la huella
  • Las primeras medidas
  • La energía
  • El pan que vuelve y los residuos
  • Los envases
  • La flota de reparto
  • La siguiente inversión
  • Lo que dice la panificadora
