A 90-minute, 4-round basic Express simulation for Spanish vocational training (Formacion Profesional, grado superior), module Alimentacion equilibrada of the Tecnico Superior en Dietetica (Real Decreto 536/1995).

The learner is Itziar Belaustegui, the dietitian of the canteen of a fictional public infant and primary school run by a fictional collective-catering company, who plans the menus of the first term for 340 diners a day: the menu cycle on the frequencies of Real Decreto 315/2025, portions and cost per ration, plate waste, seasonal purchasing, a pupil with a diagnosed allergy, a supplier's product change, a food-price rise and the monthly menu for families.

A correct menu that nobody eats nourishes nobody. Scored on nutritional adequacy, food cost per ration, plate waste and complaints; no clinical procedures. Two hard-fails cap the round at 40: serving a pupil with a diagnosed allergy the general menu with the allergen taken off the plate (Ley 17/2011 art. 40.5; Real Decreto 315/2025 art.

10) and serving a supplier's new product without checking its allergens (Regulation (EU) 1169/2011 art. 9.1.c; Real Decreto 126/2015 art. 4). Spanish primary, English parity.

An introductory simulation that assumes no prior knowledge of the subject, designed for undergraduate courses. It also works in vocational and high-school programmes and in onboarding sessions.
