A 90-minute, 4-round basic Express simulation for Spanish vocational training (Formacion Profesional, grado superior), module 0086 Gestion de calidad y ambiental en la industria alimentaria of the Tecnico Superior en Procesos y Calidad en la Industria Alimentaria (Real Decreto 451/2010) and of the Tecnico Superior en Vitivinicultura (Real Decreto 1688/2007).

The learner is Irene Badostain, a newly qualified quality manager who owns the traceability and the withdrawal and recall procedure of a fictional dairy plant and leads it through two product crises in 2027: 2,500 tonnes.

Four situations set the plant's course: what a lot is and a recall procedure tested with a mock recall, Listeria monocytogenes detected in 25 g in a lot of fresh cheese already in the shops and the line, milk in a plant-based dessert and the newspaper on the phone, the corrective actions and the certification audit. Responding fast limits the lots affected and the damage to the brand.

Scored on product under control, the cost of control and crisis, the hours to trace and act and the lots affected; training-level decision practice that complements the plant's own procedures and gives no medical advice.

Two hard-fails cap the round at 40: shipping on from the line with the positive unexplained and leaving the lots with undeclared milk in the shops (Regulation (EC) No 178/2002, articles 14 and 19; Regulation (EC) No 2073/2005 as amended by Regulation (EU) 2024/2895; Regulation (EU) No 1169/2011, Annex II).
